Cheese-Stuffed Burger
We already posted our recipe for a classically delicious burger, but this time we wanted to give you the option of stuffing the ground beef with melty cheese, so when you bite into it, a gooey cheese sauce explodes with flavour. We kept the toppings as classic and simple as we could, so you can really enjoy the cheesiness of this burger.
The toppings are very simple, simply cut whole slices from a ¼ red onion, a roma tomato, 2 large pickles (they can be small rounds or sliced the long way), and wash and dry 2-4 leaves of iceberg lettuce. Keep them in the fridge.
Pre-heat the oven to 350F. Place 2-4 slices of bacon on a tray with parchment paper and cook the bacon for 8-14 minutes (depending on the thickness) or until crispy. Remove from the oven and reserve.
Mix 500g of ground beef with a good serving of salt and pepper, make sure to really mix it in with your hands. Separate the beef into two equal pieces. Remove a 1/3 of each piece and reserve separately.
Press one of the larger pieces onto a cutting board and form a patty, make it slightly bigger than the bun you chose. Press the middle of the patty until it`s about 1/3 of the thickness of its border to make a well for the cheese.
Fill the well with 1 tablespoon of cream cheese, a good serving of shredded mozzarella and another of shredded cheddar cheese.
Press down one of the smaller pieces into a patty that is the same size as the filled one. Place it on top of the cheese and seal the sides, making sure to fully close any gaps between the lower patty and the top one.
In a large pan or skillet, drizzle a little bit of oil and let it become very hot. Sear each side of the patties and cook them for about 4 minutes a side, until the meat is cooked through.
Assemble your burger by coating both side of the bun with ketchup, mustard and/or mayo, place the hot patty on the bottom of the bun, followed by the bacon and vegetables, finish with the lettuce and close it with the top bun.

Ingredients
2 Hamburger Buns, sesame optional
1 Cup Cheddar Cheese, shredded
1 Cup Mozzarella Cheese, shredded
2 Tbsp Cream Cheese
500g Ground Beef
¼ Red Onion, sliced
1 Roma Tomato, sliced
2 Pickles, sliced
2-4 Slices of Crispy Bacon
2-4 Leaves of Iceberg Lettuce
Oil, salt and pepper to taste
Mayo, mustard and ketchup to taste
Step-by-Step
1. In a large bowl, season the ground beef with salt and pepper, mix it well with your hands and separate it in two equal-sized portions. Separate 1/3 of each portion and reserve.
2. Open the larger part into the shape of a patty, make sure it`s slightly larger than the burger bun. With your fingers, press down the middle to make a well, keep the edges high and thick. Fill the well with a mixture of all the cheeses. Press the reserved 1/3 of each portion into a thinner patty and use it to close the cheese-filled portion. Make sure to seal the sides so no cheese comes through. Place both patties in the fridge until you`re ready to cook them.
3. Thinly slice red onion, tomato and pickles, cook the bacon at 350F for 8-14 minutes (until crispy), and wash and dry the lettuce leaves.
4. Drizzle oil on a pan (not nonstick) and turn the heat on high. Sear each patty and cook it for about 4 minutes a side, until the meat is cooked through and the outside is browned and crispy.
5. Coat both sides of each bun with your choice of mustard, ketchup and mayo and place each patty on the bottom half of the bun. Top it with all your prepared vegetables and bacon, and leave the lettuce as far from the actual patty as you can.
