Tabbouleh
Tabbouleh is one of the freshest and most satisfying foods you can have. It`s so delicious that we eat by the spoonful at home, but you can serve as a side dish to either complement a Mediterranean meal or to cut down the fat from a greasy one. It`s really simple and can be done in no time so, quick recipe is as follows:
Tabbouleh

Time: 5 minutes + 30 minutes resting
Ingredients
1 Tomato
½ Red Onion
½ Cucumber
2 Large Lemons (juiced)
3 Tbsp Extra Virgin Olive Oil
1 Cup Bulgur Wheat
1 Cup Fresh Parsley
½ Cup Fresh Mint
Salt and Pepper
Step-by-Step
1. Soak or cook 1 cup of Bulgur Wheat according to package instructions (we bough Yoki brand, which simply soaks for 3 hours). Drain well by pressing most of the water out in a strainer.
2. Small dice onion, tomato and cucumber, zest and squeeze the juice of two large lemon, and roughly chop parsley and mint.
3. Mix all ingredients, salt and pepper to taste, and add more lemon juice and parsley if you wish. Let it sit in the fridge for at least 30 minutes before eating so all the flavours soak in.
