Chicken Souvlaki with Tzatziki Sauce

Chicken Skewers are an easy, healthy and filling meal to eat in front of the TV or sitting on your porch. And, when we can, they`re also a great thing to pass around in a barbecue.

Cut 4 chicken breasts into 1-inch cubes and put them in a sealable bag. Add the juice and zest of one lemon, 1 tsp of sliced ginger, 2 tablespoons of good olive oil, 1 minced garlic clove, 1 teaspoon of mustard seeds, 1 cup of plain yogurt, 1 teaspoon of salt, 1 teaspoon of black pepper, fresh rosemary and 1 teaspoon of dried oregano, – if you have fresh oregano, even better!

Mix well, seal and put it in the fridge to marinate over night (at least 4 hours).

Pre-heat the oven to 350F.

Place 10-12 skewers in a bowl with cold water and soak for 30 minutes, this will help prevent them from burning when you grill the chicken.

Remove chicken from the bag and discard extra marinade. Place the pieces on a tray with parchment paper and roast for about 10 minutes.

Remove from the oven and skewer carefully. You should be able to get about 8 filled skewers depending on the size of it.

Turn your grill on medium-high heat (we live in an apartment so we had to use our trusty George Foreman). Grill skewers for about 2 minutes a side, or until the chicken is golden and a bit charred and the internal temperature is above 165F.

For the Tzatziki sauce, simply grate 1 garlic clove and about 1-2 inches of fresh cucumber into 1 cup of plain yogourt. Mix well and let the flavours soak in for 30 minutes in the fridge. Taste it and add salt to taste.

Keep in the fridge for up to 5 days and enjoy as a spread, dip, salad dressing or sauce.

Time: 30 minutes

Ingredients

4 Chicken Breasts

1 Lemon (Juice and Zest)

1 tsp Fresh Ginger (Sliced)

2 Tbsp Extra Virgin Olive Oil

1 Garlic Clove

1 tsp Mustard Seeds

1 Cup Plain Yogourt

1 Sprig Rosemary

1 tsp Dried Oregano

1+ tsp Salt

1+ tsp Cracked Black Pepper

Step-by-Step

1.       Cut each chicken breast into 1-inch cubes. Add all your ingredients to the bag and let marinate for at least 4 hours (better overnight).

2.       Remove the chicken from the bag, discard the marinade and place them on a tray with parchment paper. Season with salt and pepper to taste.

Note: If you`re using wooden skewers, soak them in cold water for about 30 minutes before the next step.

3.       Cook them in a pre-heated oven 350F for about 10 minutes. Remove chicken from the oven and skewer. Grill for about 2 minutes a side on high heat.

Tzatziki Sauce

Servings: 1 Cup

Time: 5 minutes

Ingredients

2-3 Tbsp Cucumber (Grated)

1 Garlic Clove

1 Cup Plain Yogourt

Salt to taste

Step-by-Step

1.       Grate cucumber and garlic into plain yogourt Taste it and add salt. Let the flavours marinate for at least 30 minutes before eating.
