Burrito
A perfect burrito has a few main ingredients: Seasoned Rice, Beans, a fresh Salsa, Cheese, Meat and, of course, a warm and soft tortilla.
So, since there are a lot of steps to it, we separated the whole recipe into different parts. You can eat them all separated with other foods or put everything in a tortilla and call it “the best burrito I ever had”. We`re okay with either-or.
Either way, this is how we made it:
Fresh Salsa
Ingredients
½ Red Onion
1 Large Tomato
4-6 Slices of Pickled Jalapeno (optional)
1-2 Tbsp of Pickle Juice from Jalapeno or White Vinegar
1 tsp Salt
1 tsp Black Pepper
¼ Lemon (juiced)
Step by Step
1. Chop onion, tomato and jalapeno into small dice.
2. Mix all ingredients in a bowl and refrigerate for 30 minutes.
Spanish Rice with Kidney Beans
Ingredients
½ Spanish Onion
2 Garlic Cloves
1 tsp Ground Cumin
1 tsp Paprika
1 tsp Dried Oregano
1 Cup Rice
1 Tbsp Tomato Paste
1 Can Red Kidney Beans
1 Can Black Beans
1 Cup Chicken Broth (can be vegetable)
1 tsp Chili Peppers (optional)
4 Strands of Saffron
Salt and Pepper to taste
Canola/Vegetable Oil
Step by Step
1. Wash the rice with cold water and drain. Keep it in the strainer to get most of the water out.
2. Cut the onion in small dice. I a medium pot, sautee the onion in medium heat until tender with one tablespoon of oil.
3. Mince the garlic and add it to the onion with all the spices. Sautee for another minute.
4. Add the saffron to the broth and reserve.
5. Add the rice to the pot with the tomato paste and mix. Let it cook for 1-2 minutes.
6. Drain the beans and add it to the pot. Mix and add the broth as well.
7. Cover with a lid and cook for 12-15 minutes.
Basic Shredded Beef or Pulled Pork
(You can use our Roast Beef Recipe!)
Ingredients
1 Lb Shredded Beef/Pulled Pork with basic flavours
½ Tbsp Chili Powder
¼ tsp Garlic Powder
¼ tsp Onion Powder
¼ tsp Dried Oregano
½ tsp Paprika
1 tsp Ground Cumin
½ tsp Ground Coriander
Salt and Pepper to taste
½ Tbsp Butter
Step by Step
1. If not already shredded, shred the beef or pork with two forks.
2. Mix all the spices to make your taco seasoning.
3. In a medium frying pan, melt the butter on medium heat and add the shredded beef/pork and taco seasoning. Mix until the meat is fully coated with the butter. If the meat is too dry, add 1-2 Tbsp of broth or water.
4. Cook it until the meat is warmed through (5-7 minutes)
Burrito
Servings: 2-4 (depending on tortilla size)
Time: 30-40 minutes
Ingredients
1 Cup Shredded Marble or Cheddar Cheese
½ Cup Sour Cream
1 Cup Shredded Lettuce
2-4 Flour Tortillas
1 Lb Taco Shredded Beef/Pork
1 Cup Spanish Rice
Fresh Salsa
Hot Sauce (optional)
Step by Step
1. Lightly coat the middle of the tortilla with sour cream, add the lettuce, Spanish rice, meat, fresh salsa and shredded cheese. Only add enough to cover the mid-section of the burrito in a burrito shape.
2. Fold the two short sides of the tortilla to close off the ends of the burrito, then fold one of the long sides onto the filling. Try to close it as tight as you can while keeping the small ends closed. Roll it all the way.
3. Grill the burrito for 3-5 minutes. You can also use a non-stick pan on medium heat and cook the burrito one side at a time.
4. Enjoy your Burrito.
