Breakfast Tacos
Some leftovers make up for the best breakfast foods and this one is not an exception! Corn tortillas topped with a full wholesome breakfast and a fresh salsa, what`s not to like?
Pre-heat the oven to 350F.
Start by mixing 4 eggs, 1 teaspoon of tabasco and 1 tablespoon of sour cream with a dash of salt, reserve in a bowl. Bringing the eggs closer to room temperature before you cook them will make them fluffier.
Cut ¼ red onion, a ½ tomato and 2 green onions into small pieces. Mix them and reserve in another small bowl.
Chop 3 slices of bacon into 1 cm slices and take the sausage out of the casing, make sure to break down the sausage into smaller pieces. Add it to a medium pan on medium heat and cook for about 7 minutes, until the sausage is cooked and the bacon is lightly rendered.
Reserve the bacon and sausage in a bowl in a warm place and keep the fat in the pan for the potatoes. Smash the already cooked (boiled or roasted) potatoes with a fork and put it in the same pan. Re-warm and lightly fry the smashed potatoes in the bacon/sausage oil until it starts to lightly brown on the bottom. Reserve somewhere warm.
Before you cook your eggs, top 6 corn tortillas with a little bit of shredded cheese and place it in the oven for about 5 minutes, until the tortillas become warm and cheese lightly melts. You can cook the eggs while they`re in the oven.
Add 1-2 teaspoons of oil to the same pan and pour the egg mixture in. With a wooden spoon or rubber spatula mix the eggs in a circular motion until they become scrambled eggs. These should still be moist by the time you remove them from the heat.
Fill each tortilla with a little bit of potatoes, eggs, sausage and bacon and top everything off with the fresh salsa. Enjoy with more sour cream and hot sauce!

Ingredients
1 Large Potato (boiled)
1 Sausage
3 Slices of Bacon
4 Eggs
½ Tomato
2 Green Onions
¼ Red Onion
1 Tbsp Sour Cream
1 tsp Tabasco
6 Corn Tortillas
Shredded Cheese (optional)
Step-by-Step
1. In a small bowl, mix 4 eggs, tabasco, sour cream and a dash of salt and reserve. Small dice the red onion, tomato and green onions and reserve in another small bowl.
2. Pre-heat the oven to 350F.
3. Chop the bacon slices into small pieces and remove the sausage contents from the casing and break It down into small pieces. Saute both in a medium pan on medium heat until fat is rendered and sausage is fully cooked. Reserve in warm place but leave the rendered fat and oil on the pan.
4. Smash the already cooked potato and add it to the same pan, fry the potato in the bacon/sausage oil until it lightly browns. Season with salt and pepper to taste and reserve somewhere warm.
5. Place the tortillas in the pre-heated oven with a little bit of shredded cheese on top. Let them warm up and the cheese melt for about 5 minutes.
6. Add 2 tsp of oil to the same pan (if needed) and add the mixture of eggs to it. Use a rubber spatula or wooden spoon to lightly mix the eggs while they cook. They should still be fairly moist.
7. Assemble the tacos with potatoes on the bottom, topped with eggs, bacon and sausage and topped with the fresh salsa.
