Skillet Sausage and Drunken Potatoes

One of these nights we didn`t want to make a mess when cooking so we decided to just put all the leftovers we had in the fridge into a big skillet and make a deliciously easy meal. And it looks good too.

Pre-heat oven to 400F. Cube 3 potatoes in medium sized pieces and boil in water with salt and a pinch of baking soda until tender. Drain and reserve.

Cut 1 Red Onion into medium chunks, slice 2 garlic cloves thinly, half 12 cherry tomatoes and cut each of the 3 sausages in 4-5 large pieces. Add 2 Tbsp of olive oil to a medium skillet and evenly spread the chopped onions, garlic, tomatoes and sausages.

Mix in 2 tablespoons of tomato paste, salt and pepper to taste, 1 tablespoon of Italian seasoning and ½ cup of beer (we like to use IPA for the stronger flavour) to coat all the vegetables and meat. Evenly spread them on the skillet.

Put the skillet in the oven (pre-heated to 400F) and cook for 30-40 minutes, until sausages are cooked and the sauce is slightly thickened. Top with pickled vegetables (optional) and fresh parsley to garnish.

You can also serve with poached shrimp to make a surf-and-turf version of this dish or make it a breakfast version with a few fried eggs on top. It`s an incredibly versatile base that tastes fantastic on its own. Let us know what you end up doing in the comments!

Ingredients

1 Red Onion (medium pieces)

2 Cloves of Garlic (thinly sliced)

3 Sausages (divided in 4-5 pieces)

1 Cup Cherry Tomatoes (halved)

2 Cups Boiled Potatoes (cubed)

1 Tbsp Mallia Seasoning (or Italian Seasoning)

2 Tbsp Tomato Paste

½ Cup Strong Beer

Fresh Parsley

Salt and Pepper to taste

Step-by-Step

1.       Boil cubed potatoes with salt and a pinch of baking soda until tender. Reserve.

2.       Add all ingredients to a medium skillet, mix and spread them evenly.

3.       Cook for 30-40 minutes in an oven pre-heated to 400F, until sausages are cooked and sauce slightly reduced. Garnish with fresh parsley.
